Cabbage is prepared and consumed in many ways. The simplest options include eating the vegetable raw or steaming it, though many cuisines pickle, stew, sautée or braise cabbage.[24] Pickling is a common way of preserving cabbage, creating dishes such as sauerkraut and kimchi,[14] although kimchi is more often made from Chinese cabbage (B. rapa subsp. pekinensis).[24] Savoy cabbages are usually used in salads, while smooth-leaf types are utilized for both market sales and processing.[15] Bean curd and cabbage is a staple of Chinese cooking,[74] while the British dish bubble and squeak is made primarily with leftover potato and boiled cabbage and eaten with cold meat.[75]

In Poland, cabbage is one of the main food crops, and it features prominently in Polish cuisine. It is frequently eaten, either cooked or as sauerkraut, as a side dish or as an ingredient in such dishes as bigos (cabbage, sauerkraut, meat, and wild mushrooms, among other ingredients) gołąbki (stuffed cabbage) and pierogi (filled dumplings). Other eastern European countries, such as Hungary and Romania, also have traditional dishes that feature cabbage as a main ingredient.[76] In India and Ethiopia, cabbage is often included in spicy salads and braises.[77] In the United States, cabbage is used primarily for the production of coleslaw, followed by market use and sauerkraut production.[40]

This is the rare and famous Italian savoy cabbage from Asti and highly prized throughout the region! Each year in November the whole village of Montalto Dora is involved in celebrating this locally grown cabbage at the Cabbage Fair that is visited by Italians from all over Piedmont, Umbria, and Tuscany.

 An early variety, suitable for cultivation in the autumn and early spring. A rounded, medium sized head, weighing 1.8

Pak Choy, Bok Choy, Chinese Cabbage

Bok choy, pak choi or pok choi is a type of Chinese cabbage. Chinensis varieties do not form heads and have green leaf blades with lighter bulbous bottoms instead, forming a cluster reminiscent of mustard greens. It has a flavor between spinach and water chestnuts but slightly sweeter with a mildly peppery undertone.

Sow bok choy in spring and again in late summer for harvest in fall. Sow in double rows, with rows spaced 10 inches (25 cm) apart. Plant seeds 2 inches (5 cm) apart and barely cover them with soil. Gradually thin to 8 inches (20 cm) apart.

Chinese cabbage is a cool-weather plant that will bolt and go to seed quickly in warm weather and long days; grow Chinese cabbage in spring or autumn in temperatures ranging from 45° to 75°F (7-24°C). Sow seed 4 to 6 weeks before the average date of the last frost in spring.

New Zealand Cook's Cabbage Spinach Seeds, Cooks Cabbage, Tetragon, Australia, Argentina, and Japan

Tetragon cabbage, also known as New Zealand spinach, is a leafy plant with triangular leaves, yellow flowers, and small, hard capsules that contain seeds. It's a trailing plant that can form a thick carpet on the ground or climb through other plants.Tetragon is usually grown for its leaves, which can be added in salads or cooked. Thanks to its ability to withstand difficult climates, this plant grows readily in the wild in China, Reunion Island, and New Zealand. It is also fairly easy to grow in Quebec, but it will behave as an annual since it cannot tolerate frost.

Held up by a round stem, tetragon has a really unique look with its thick leaves and quadrangular fruits. Good source of vitamin B1, B2 and C; the spinach is both delicious and nutritious!

This plant is known in English as water spinach, river spinach, water morning glory, water convolvulus, or by the more ambiguous names Chinese spinach, Chinese watercress, Chinese convolvulus or swamp cabbage, or kangkong in Southeast Asia and ong choy in Cantonese.

Water spinach has light green ovate leaves, its stems are hollow, so they can float on the water. Both leaves and stems are edible and can be used as the way you use spinach. Under tropical conditions, water spinach can be harvested throughout the year, as the leaves grow again after harvesting. In cooler climates, it is grown as annual, mostly in wide containers.

Water spinach is an annual or perennial, aquatic herb whose stem is hollow, spongy and 2–3 m long. It trails or foats on water and is glabrous, or hairy at the nodes. The stem also contains a milky sap. The surfaces of the leaves are even and arrowhead-shaped. The blades extend up to 5–15 cm and are 2–6 cm broad, whereas the petiole is about 3–14 cm in length. The leaves generally foat on water. The fruits are oval-shaped and enclose 1–4 seeds. Seeds may differ in color ranging from gray, brown to black. The flowers are bisexual, funnel shaped and are white to light purple in color.
