Asian mustard (Brassica rapa rosularis) having a rosette of edible dark green spoon-shaped glossy leaves also : the leaves.

Sow tatsoi in spring and again in late summer for harvest in fall. Sow in double rows, with rows spaced 10 inches (25 cm) apart. Plant seeds 2 inches (5 cm) apart and barely cover them with soil. Gradually thin to 8 inches (20 cm) apart.

Tatsoi is a very versatile green, equally suited to being served raw or lightly cooked. To make it easy, just use tatsoi anywhere you'd use spinach. Lightly steam or sauté it, wilt the leaves with a warm dressing, or add them to a soup at the end of cooking.

Bok choy, pak choi or pok choi is a type of Chinese cabbage. Chinensis varieties do not form heads and have green leaf blades with lighter bulbous bottoms instead, forming a cluster reminiscent of mustard greens. It has a flavor between spinach and water chestnuts but slightly sweeter with a mildly peppery undertone.

This plant is known in English as water spinach, river spinach, water morning glory, water convolvulus, or by the more ambiguous names Chinese spinach, Chinese watercress, Chinese convolvulus or swamp cabbage, or kangkong in Southeast Asia and ong choy in Cantonese.

Water spinach has light green ovate leaves, its stems are hollow, so they can float on the water. Both leaves and stems are edible and can be used as the way you use spinach. Under tropical conditions, water spinach can be harvested throughout the year, as the leaves grow again after harvesting. In cooler climates, it is grown as annual, mostly in wide containers.

Water spinach is an annual or perennial, aquatic herb whose stem is hollow, spongy and 2–3 m long. It trails or foats on water and is glabrous, or hairy at the nodes. The stem also contains a milky sap. The surfaces of the leaves are even and arrowhead-shaped. The blades extend up to 5–15 cm and are 2–6 cm broad, whereas the petiole is about 3–14 cm in length. The leaves generally foat on water. The fruits are oval-shaped and enclose 1–4 seeds. Seeds may differ in color ranging from gray, brown to black. The flowers are bisexual, funnel shaped and are white to light purple in color.

A popular Chinese cabbage that is used for braising and stuffing. The cabbage is barrel shaped with crisp white stalks and crinkled leaves, which are pale green or yellow in color. Short bok choy is ten to twelve inches long and has a diameter of approximately six inches. It is available throughout the year. When selecting, look for a firm compact head with fresh leaves. Store in the vegetable drawer of the refrigerator, wrapped in plastic, and the cabbage should stay fresh for at least 4 to 5 days. Also known as baby Pak Choy.

The typical Nai-Pe-Tsai type pak choy, semiupright plant produces thick, white stems and deep green leaves. Good for warm areas as it is heat tolerant. This Chinese non-heading leaf type has clusters of 8 to 12" wide white celery-like stalks with large, nearly round, smooth, glossy leaves. The mild, mustard-y flavor is not bitter.
