Here’s a breakdown of which seeds you can advance (start early or pre-seed) for Fall, Winter, and Spring harvests and how to do it:

Fall Garden (Plant in Summer for Fall Harvest)

Start seeds in July–August, either directly in the garden or indoors for transplanting.

Great seeds to advance:

  • Leafy Greens: Kale, spinach, Swiss chard, mustard greens, arugula
  • Root Vegetables: Carrots, beets, radishes, turnips
  • Brassicas: Broccoli, cabbage, cauliflower, Brussels sprouts

Creating a Winter Garden from seed involves selecting hardy, cold-tolerant crops that can either be sown in late summer/early fall for winter harvest or overwintered for early spring harvest. Brunswick Cabbage, German Variety

Brunswick cabbage is a cold-hardy fall/winter variety that is also heat resistant. It has good flavor fresh and is a favorite for making sauerkraut. The solid heads can weigh 6-10 lbs. These are also delicious in our Spicy Cabbage Salsa Recipe!

Cabbage seeds can be planted outdoors.

Sow seeds 2-3 weeks before the last frost date.

Plant seeds 1/4" deep and 3" apart. Seeds should come up in  7-14 days. Thin seedlings to 18" apart. 

Keep cabbage free of weeds. This is especially important when they are small because the weeds will take nutrients away from the cabbages. 

Each packet contains 150 Brunswick Cabbage seeds. Brassica oleracea. Annual. Open-pollinated, heirloom, non-GMO. Harvest in 90 days. 

This packet plants a 75' row with 50 plants.

First imported to the U.S. in 1824, Brunswick cabbage history says all cole crops were exported under the Brunswick name at that time. This German heirloom, a large drumhead, is becoming rare as winter cabbage growing decreases. For many years it was a favorite for making sauerkraut.

An excellent late-season variety, the large, 6-10lb. drum-shaped heads are dense and firm. A favorite choice for homemade sauerkraut. Cabbage lasts longer in the fridge than most vegetables. If cabbage is properly stored, it can last from 3 weeks to up to 2 months in your refrigerator. In optimum root cellar conditions, it can even last longer. Do not remove the outer leaves nor wash until ready to use. It’s versatile and can be used for soups and salads, shredded into coleslaws, stir-fried, and fermented into sauerkraut. It can be stuffed whole or use individual cabbage leaves, steamed, boiled, fried, roasted, and grilled.

Cucumber Homemade Pickles

Homemade Pickles Cucumber is a very vigorous vining plant that produces a large abundance of solid, crisp, and flavorful cucumbers. The firm crunchy cucumbers grow 6" long and the plant is resistant to common cucumber diseases.

Cucumbers are eaten fresh on salads and in sandwiches and so much more. They can also be baked, roasted, and stir-fried. Preserving cucumbers is commonly done by pickling them with brine and canning in glass jars. Other ways to store cucumbers is by fermenting or dehydrating them.

Homemade Pickles Cucumber was developed to be one of the best varieties for making pickles. Most pickling cucumbers are shorter than slicing cucumbers and their flesh and skin are thicker and crispier. Expect high yields of cucumbers that can be harvested at 1" long for tiny sweet pickles, 3" long for dills, or 6" long for spears. At whatever size, they are firm and tender-sweet. This cucumber has a wonderful sweet flavor when eaten fresh, and can be grown for that reason alone.

Rattlesnake Gypsy Blue Ribbon Watermelon

A great-tasting, snake-striped heirloom watermelon that grows up to 25-50 lbs. or even larger!

This Watermelon is one of the oldest heirloom varieties in existence. Also known as “Gypsy,” this variety was developed in Georgia around the 1830s.
