Fall Garden (Plant in Summer for Fall Harvest)

Start seeds in July–August, either directly in the garden or indoors for transplanting.

Creating a Winter Garden from seed involves selecting hardy, cold-tolerant crops that can either be sown in late summer/early fall for winter harvest or overwintered for early spring harvest. Chantenay carrots are short carrots with light orange skin and orange-red colored cores. Chantenay carrots are grown for canned and processed carrots because of their high yield. The carrots can be eaten fresh, frozen, or canned. Chantenay carrots can be eaten raw or cooked, with their taste usually described as sweet and crisp. However, they may become coarse and tough when grown past maturity, specifically in the heat of summer. Like all carrots, Chantenay carrots are high in carotene and fiber.

There are two main types of Chantenay carrot seeds available to gardeners, Red-cored Chantenay or Royal Chantenay.

Red-cored Chantenay carrots have a redder core and blunt tip.

Royal Chantenay carrots have an orange-red core and a tapered tip.

Lettuce seeds can be planted directly into the garden soil.

Sow the seeds directly into the garden soil beginning in early spring starting 2 weeks prior to the last frost-free date. 

Plant the tiny seeds 1/4" deep and later thin to 10" apart. Seeds can be planted every 3 weeks for a staggered harvest or once again in late summer for a fall harvest. Fall planting can occur 10 weeks before your average first frost date.

Build up a raised row of soil about 8" wide. Scatter the seeds in a line on top and then cover with 1/4” to 1/2" of soil. Keep the soil evenly moist. Lettuce seeds will germinate in 5-10 days depending on the soil temperature. Germination is slower in the cold weather of spring. 

Lettuce has shallow roots so gently mulch around it to deter weeds and retain soil moisture.

The ways to harvest lettuce include harvesting it as a baby green by picking individual young leaves, harvesting the outer leaves as needed and letting the plants grow, or by harvesting the entire head by slicing it off about an inch above the soil.

Produces round-oval fruit that is flattened at the tip and deeply grooved. Violet with blue and white tinges near the stalk. Compact  flesh  with few seeds. Resistant to transportation and particularly suitable for industrial processing. A vigorous and erect plant with well covering foliage. Suitable for growing either in a nursery or directly outdoors.

Peculiar round white eggplant with shades of rose color. Large size fruits of 12-15cm in diameter. Italian heirloom, very productive and medium-early cycle. The flesh is white and creamy with a  sweet and delicate savor.

Eggplant should always be cooked before it is consumed, as it has an alkanoid that can damage the digestive system. It contains vitamins, antioxidants, iron, fiber and magnesium among many others.

The sowing takes place in March or April outdoors, while in the interior it is done from January. At 1cm deep and 45cm between plants. Seeds need temperature of 25ºC to germinate. After 3 to 5 months from sowing, the fruits will be ripe and can be harvested. Prefers fertile and well-drained soils.
