Pre-Seed Vegetable Seeds

To seed in advance for fall, winter, and spring.

Advancing seeds for fall, winter, and spring gardens means starting or preparing seeds early—either by sowing, pre-seeding, or transplanting—so that you maximize your growing time, especially in climates with short seasons like much of Canada.

Here’s a breakdown of which seeds you can advance (start early or pre-seed) for Fall, Winter, and Spring harvests and how to do it:

Fall Garden (Plant in Summer for Fall Harvest)

Start seeds in July–August, either directly in the garden or indoors for transplanting.

Great seeds to advance:

  • Leafy Greens: Kale, spinach, Swiss chard, mustard greens, arugula
  • Root Vegetables: Carrots, beets, radishes, turnips
  • Brassicas: Broccoli, cabbage, cauliflower, Brussels sprouts

🧑🌾 Tips:

  • Pre-seed indoors or under shade during hot summer.
  • Harden off seedlings before transplanting in cooler fall soil.
  • Use row covers or cold frames to extend the season into late fall.

Creating a Winter Garden from seed involves selecting hardy, cold-tolerant crops that can either be sown in late summer/early fall for winter harvest or overwintered for early spring harvest. Here's a list of seed varieties ideal for a winter garden, especially in Canadian and northern U.S. zones:

🌱 Winter Garden Seed Varieties

🥬 Leafy Greens

  • Kale (‘Winterbor’, ‘Red Russian’) – Extremely cold-hardy.
  • Spinach (‘Bloomsdale Long Standing’, ‘Giant Winter’) – Sweetens with frost.
  • Swiss Chard – Survives mild winters with mulch.
  • Mâche (Corn Salad) – Very cold-tolerant; perfect for salad greens.
  • Claytonia (Miner’s Lettuce) – Thrives in cool, damp conditions.

🥕 Root Vegetables

  • Carrots (‘Napoli’, ‘Merida’) – Can be overwintered in the ground with mulch.
  • Beets – Early fall sowing gives sweet winter roots.
  • Turnips – Fast-growing and frost-tolerant.
  • Parsnips – Require frost to develop flavor; sow midsummer.
  • Rutabaga – Cold-hardy and stores well.

🥦 Brassicas

  • Cabbage (‘January King’, ‘Wintergreen’) – Overwinters with protection.
  • Broccoli (‘Purple Sprouting’, ‘Calabrese’) – Best for overwintering in mild climates.
  • Brussels Sprouts – Improves with frost.

🌿 Herbs

  • Parsley – Cold-hardy biennial.
  • Chives – Hardy perennial, regrows early in spring.
  • ThymeOregano, and Sage – Hardy perennials in many zones.

🧤 Tips for Winter Gardening Success

  • Use Cold Frames or Row Covers to extend harvest and protect seedlings.
  • Mulch heavily to insulate soil and root crops.
  • Choose short-day or overwintering varieties specifically labeled for cold climates.
  • Succession plant in late summer (August–September) for a steady supply through winter.

🌱 Spring Garden (Start in Late Winter or Very Early Spring)

Advance seeds indoors in February–March to transplant after the last frost.

Ideal for seed advancement:

  • Tomatoes, peppers, eggplant (start 6–8 weeks before last frost)
  • Brassicas (broccoli, cabbage, cauliflower)
  • Herbs: Parsley, dill, thyme
  • Lettuce, onions, leeks (early starters)
  • Peas: Soak and pre-sprout for fast germination

💡 Tips:

  • Use grow lights or sunny windowsills.
  • Harden off plants before transplanting outdoors.
  • Use cold frames to get an early start in the ground.

Pioneer cucumbers are a reliable slicing variety known for their smooth, dark green skin and straight, uniform shape. This variety is valued for its mild, refreshing flavor and good resistance to common cucumber diseases, making it a great choice for home gardens and market growers.

Pioneer cucumbers are best enjoyed fresh due to their crisp texture and clean taste. Slice them into salads, sandwiches, and wraps, or serve with dips. Red Leaf Boston Lettuce, Limestone Lettuce, Butterhead Lettuce

Red Boston lettuce is a medium to large varietal and round in shape with loose, wavy, cupped leaves and an open center, similar in appearance to a rose. The broad, soft, outer leaves are thick and frilled at the edges with swirls of red, purple, and burgundy, and these leaves encompass more tightly bound, yellow-green leaves in the center of the head. Together they form a rosette pattern of leaves that are wide and have a smooth, silky consistency with a uniform crunch. Red Boston lettuce is tender and crisp with a nutty, mild, and sweet flavor.
Red Boston lettuce is best suited for both raw and cooked applications such as braising or boiling. Predominately used as the principle ingredient in salad, its textures and subtle flavors are perfect for savory and bold, or bright, fruity companion ingredients. Red Boston lettuce is commonly layered in sandwiches or used as a wrap for tuna or chicken. In addition to fresh preparations, Red Boston lettuce can be cooked and transformed into an earthy and sultry ingredient when slowly braised or added to simmering soup, achieving a level of caramelization when paired with the right ingredients such as butter, rich meats, and chicken stock. It can also be used in stir-fries or mixed into cooked peas. Red Boston lettuce pairs well with bright herbs including dill, basil, and mint, lemon juice, mustard, vinaigrettes, citrus-based dressings, blue cheese, feta cheese, cottage cheese, ricotta cheese, bacon, anchovies, shallots, leeks, nuts such as pistachios, walnuts, hazelnuts, and Marcona almonds, apples, pears, seedless grapes, persimmons, and sliced grapefruit. It will keep 3-4 days in a loosely closed container when stored in the crisper drawer of the refrigerator.

Popular Perpetual Spinach, Swiss Chard, Beet Family, Indian Variety

Perpetual spinach is actually a chard (beet family) but is very similar to true spinach in flavour. We prefer it as it is much easier to grow and far more vigorous than true spinach. It also has the advantage of constantly producing a new crop when picked and so is ideally suited to gardening in a small space.

Health benefits of Swiss chard. Swiss chard is a highly nutritious vegetable. Just one cup provides over three times the recommended daily allowance of vitamin K. It is also commonly known as silverbeet, spinach beet, perpetual spinach, crab beet, and mangold.

Direct sow after the last spring frost. Plant seeds 1/2" deep in compost-enriched soil in full sun. Space the plants 4-5" apart; for continual harvesting of the outer stalks, space the plants 8-10" apart for larger growth.

Seeds are great for Planting in Garden or for storing in a seed safe for emergency.

For a continuous summer crop, plant more Swiss chard every two weeks. Germination should occur in about a week. Swiss chard can survive light frosts, and can be planted as a fall crop.

Ipomoea Aquatica Water Spinach L.P.1, Kang Kong, Ong Choy, Swamp Cabbage, River Spinach, Hollow Stem

This plant is known in English as water spinach, river spinach, water morning glory, water convolvulus, or by the more ambiguous names Chinese spinach, Chinese watercress, Chinese convolvulus or swamp cabbage, or kangkong in Southeast Asia and ong choy in Cantonese.

Water spinach has light green ovate leaves, its stems are hollow, so they can float on the water. Both leaves and stems are edible and can be used as the way you use spinach. Under tropical conditions, water spinach can be harvested throughout the year, as the leaves grow again after harvesting. In cooler climates, it is grown as annual, mostly in wide containers.

Water spinach is an annual or perennial, aquatic herb whose stem is hollow, spongy and 2–3 m long. It trails or foats on water and is glabrous, or hairy at the nodes. The stem also contains a milky sap. The surfaces of the leaves are even and arrowhead-shaped. The blades extend up to 5–15 cm and are 2–6 cm broad, whereas the petiole is about 3–14 cm in length. The leaves generally foat on water. The fruits are oval-shaped and enclose 1–4 seeds. Seeds may differ in color ranging from gray, brown to black. The flowers are bisexual, funnel shaped and are white to light purple in color.

Chinese celery is an aromatic plant with a strong, peppery flavor, thin, hollow, crisp stems, and delicate leaves. It is smaller than Western celery and is often used in soups, stir-fries, and other dishes for its potent taste, which becomes milder when cooked. Also known as kintsai or leaf celery, it is commonly used in Asian cuisines.

Appearance: It features long, narrow, hollow stems that can be white to dark green, or even pink depending on the variety. The leaves are delicate and wispy.

Usage: It is rarely eaten raw and is primarily used for flavoring in cooked dishes. It is excellent in stir-fries, soups, and fried rice. Both the stems and leaves are edible.

Growing: Chinese celery is often easier to grow than its Western counterparts and can be cultivated in smaller spaces like pots. It is typically grown as an annual, though it is technically a biennial.

D'Asti Golden Celery, Traditional Celery, High Yielding Celery Seeds

Yellow celery, such as ‘Golden Self Blanching’ or Chinese yellow-stem types, is valued for its tender, pale yellow to golden stalks and its milder, sweeter flavor compared to traditional green celery. The stalks are crisp yet delicate, often with less fiber and occasional hollow centers, especially in Chinese varieties. Many yellow celery types are considered self-blanching, meaning they naturally develop their light color without soil mounding, though some benefit from light blanching for the best color and tenderness. Popular varieties include ‘Golden Self Blanching,’ ‘Golden Boy,’ ‘Golden Pascal,’ and ‘Yellow Stem.’ Thanks to its gentle celery flavor and succulent texture, yellow celery is excellent for fresh eating in salads, adds refined crunch to stir-fries and soups, and works well as a subtle flavoring ingredient in a wide range of dishes.
