It's a hardy perennial down to zone 7, but can be grown as an annual just about everywhere else. The leaves from this plant have a sweet anise like flavour, and they make an excellent tea or tonic.

Its flavor has a nutty, bittersweet sharpness with a hint of citrus, pepper, and anise (mild licorice). The caraway seed's high concentration of natural essential oils gives the spice its unique flavor profile.

Caraway seeds are also used in flavoring curries, soups, sausages, vegetables, and even liqueurs, such as the Scandinavian spirit aquavit. They're sometimes used for pickling and brining as well. Caraway seeds pair well with garlic, pork, and cabbage.

Broccoli Waltham 29 is prized for its large 4-6" dark blue-green heads and marvelous flavor. It has a reputation as a superfood because it contains a wealth of nutrients and antioxidants that support many aspects of human health. 

Broccoli seeds can be started indoors.

Start seeds inside 8 weeks before the last frost date. Place seeds 1/2" deep in pots with growing mix and place in bright light. After 5 weeks transplant the seedlings 2' apart into enriched garden soil with full sun. Broccoli is a cool-season vegetable that likes daytime temperatures in the 60s and can tolerate light frost and temperatures down to the 20s. 

Seeds take 3-4 months from the time of planting to a broccoli harvest while transplants only take 2-3 months. Unless you start seeds indoors over the winter, it may be difficult to grow a spring broccoli crop from seed, because the weather will warm too quickly. Fall crops are much easier to start from seed directly in the garden. For fall planting, build rows 2' apart and plant broccoli seeds 1" deep and 6" apart. When seedlings are 6" tall thin them to 2' apart.

Broccoli grows quickly and it needs a lot of nutrients. Rich compost will help feed your plants, and they can also benefit from applications of compost tea or from monthly applications of a balanced organic fertilizer. Like other veggies, broccoli needs to be kept evenly moist and water deeply to encourage deep roots. Mulching can help to provide uniform moisture, conserve water, and reduce weeds.

Nelly is a fine to medium thick shafted chive variety. Nelly is dark blue-green in color, vigorous, and upright growing. It is resistant to diseases and thrip spots on the leaves. Used for all fresh and industrial markets, particularly popular for bunching due to its long slender leaf presentation.

Bok choy, pak choi or pok choi is a type of Chinese cabbage. Chinensis varieties do not form heads and have green leaf blades with lighter bulbous bottoms instead, forming a cluster reminiscent of mustard greens. It has a flavor between spinach and water chestnuts but slightly sweeter with a mildly peppery undertone.

Sow bok choy in spring and again in late summer for harvest in fall. Sow in double rows, with rows spaced 10 inches (25 cm) apart. Plant seeds 2 inches (5 cm) apart and barely cover them with soil. Gradually thin to 8 inches (20 cm) apart.

Chinese cabbage is a cool-weather plant that will bolt and go to seed quickly in warm weather and long days; grow Chinese cabbage in spring or autumn in temperatures ranging from 45° to 75°F (7-24°C). Sow seed 4 to 6 weeks before the average date of the last frost in spring.
