SPINACH

Spinach, an easy to grow crop that fills in very quickly, is hardy to frosts and light freezes. Spinach can bolt if it becomes too dry or if the temperature outside warms. While it does need consistent watering, it doesn't require too many nutrients - making it ideal for a fall planting after you're done harvesting your warm-weather crops.
