Also known as starflower or bee bush, borage is an herb that flowers with delicate, pretty blue flowers. The stems, leaves, and flowers are all edible, and they add an unusual note to your food. They taste a little bit crisp and briney, somewhere between a cucumber and an oyster.

Salsify (Sahl-seh-fee) is known as the oyster plant or oyster vegetable. These giant pencils are members of the dandelion family, a Mediterranean plant with a delicate taste, ever so slightly sweet, some say slightly reminiscent of oyster. Many liken it to an artichoke instead, however.

V3 - This is the classic Italian eggplant typically used in Emilia Romagna to make 'Parmigiana' with tomatoes and parmesan cheese. This is a mid-early variety, very productive. It produces long, dark and slightly curved aubergine of medium dimensions with very few seeds inside. 

BEST TO START INDOORS

In early spring, start indoors about 2 months before outdoor night temperatures are reliably in the 50-55°F (10-13°C) range. Sow seeds 1/4 inch deep and 1 inch apart in a container of seed starting mix. Keep moist and warm 80-85°F (27-30°C) and provide a strong light source until ready to plant outside. When seedlings are 2 inches tall, transplant into deeper individual containers. Maintain at 70-75°F (21-24°C). Feed with half-strength fertilizer every 2 weeks until weather is warm enough to gradually acclimate seedlings to outdoor conditions. Transplant 2 feet apart into rich soil in full sun.

Pioneer cucumbers are a reliable slicing variety known for their smooth, dark green skin and straight, uniform shape. They typically grow 6–8 inches long with crisp, juicy flesh and small, tender seeds. This variety is valued for its mild, refreshing flavor and good resistance to common cucumber diseases, making it a great choice for home gardens and market growers.

Pioneer cucumbers are best enjoyed fresh due to their crisp texture and clean taste. Slice them into salads, sandwiches, and wraps, or serve with dips. They’re also excellent for light pickling, cucumber salads, and refreshing drinks like infused water. Their mild flavor pairs well with herbs, vinegar, and yogurt-based dressings.

Plant is a second early variety with a deep large oblate shape. Fruit is a dark red colour. Fruits are suitable for tomato sauces and salads. A beef tomato or beefsteak tomato is one of the largest varieties of cultivated tomatoes, some weighing 450 grams or more. Most are pink or red with numerous small seed compartments distributed throughout the fruit, sometimes displaying pronounced ribbing similar to ancient pre-Columbian tomato cultivars
