Puya Pepper Guajillo Type, Mole Sauce, Low-Mild Mexican Chile Pepper

Puyas are smaller than guajillo and pack more heat, measuring 5,000 to 8,000 SHU. Chefs of authentic Mexican cuisine, when looking for an unexpected kick, use Puya chiles in place of Guajillo chiles.

Unlike some Mexican dried chiles that are bred for their heat, Guajillos are bred for flavor.

These chiles are slightly fruity with a sweet heat, tannic with a hint of pine, tart berries, and light smoky undertones.

Biquinho Yellow Pepper, Brazil

Biquinho can be eaten raw or cooked, but are generally pickled in vinegar and served with meals. These small round 1-1/4" peppers have a pointy end. They have a unique, slightly tart flavor with a tiny bit of heat. This cultivar comes from a pepper that was found at a market in Port Antonio, Jamaica. The wrinkled pods are very hot and have a strong smoky flavor. Chocolate habanero is a great tasting pepper, but many people say that Jamiacan Hot Chocolate has more flavor and tastes even better! 

This beautiful pepper has great flavor and grows to about 2” around. The shiny skin of this Habanero-type pepper changes from green to red-brown and finally to chocolate brown at maturity. Capsicum chinense (100 days) Heirloom - Open-pollinated

La Sucette de Provence is an old French chili pepper variety originating from Provence, France. It has a long, tapered, conical shape measuring about 10 to 15 cm, often compared to a small lollipop or tongue.
