Also known as starflower or bee bush, borage is an herb that flowers with delicate, pretty blue flowers. The stems, leaves, and flowers are all edible, and they add an unusual note to your food. They taste a little bit crisp and briney, somewhere between a cucumber and an oyster.

Big Max pumpkins are large, round, pale to bright orange pumpkins known for their thick, yellow-orange flesh and ability to grow over 100 pounds. Imperator carrots are a widely grown, market-standard variety recognized for their long, slender, and uniform roots. Typically reaching 7–10 inches in length, they are prized for their sweetness and versatility, whether eaten fresh or cooked. Best grown in deep, loose, well-drained soil under full sun, Imperator carrots mature in about 65–80 days.

Bergamot is a good match for seafood and also stronger meats such as game. The juice can be added as a souring agent to sauces and dressings. It can also be used for ceviche. 

Other strong flavours that complement bergamot also include gin, lemongrass, ginger and chamomile. Citrus fruits match well with bergamot, such as lemon and grapefruit, but also lesser used varieties such as yuzu and kumquat.

Diamond Eggplant is a high-yielding, Ukrainian heirloom variety known for its slender, dark purple, 6-8 inch long fruits that grow in clusters. It's an early-maturing, open-pollinated plant with excellent disease resistance, making it suitable for climates with short, cool, or northern growing seasons. The firm, non-bitter, and sweet flesh is versatile for grilling, roasting, and other culinary uses.

The Principe Borghese tomato is an Italian heirloom famous for sun drying.

They have a thin skin and a thick, very meaty flesh that houses few seeds and little juice, with a rich classic tomato flavor.

Small 1-to 2-oz, grape-shaped fruit is very dry and has few seeds. It has a rich tomato taste that is wonderful for sauces.

An old Italian variety, very suitable for drying and storing over winter. Very productive and healthy plants, that do not need support for growing. Produces intensely red tomatoes that weigh between 30 to 60 g each.

Smokey (or Bronze) fennel is an ornamental herb known for its fine, feathery foliage that transitions from coppery rose to deep bronzy-purple, giving it a "smoky" appearance. It has an anise or licorice flavor, making its leaves and seeds valuable for seasoning seafood, salads, and vegetables, as well as for making tea. Growing up to five feet tall, it produces yellow flower umbels that attract butterflies and beneficial insects, adding both culinary and ecological value to gardens.

Wansoy is the Filipino name for cilantro, also known as coriander leaves, a vibrant green herb recognized for its delicate, lacy leaves and slender stems. It has an intensely fresh, pungent aroma and a bright, citrusy flavor with subtle peppery notes, though some people perceive a soapy taste due to genetic sensitivity. A staple in many global cuisines—including Latin American, Thai, Vietnamese, and Indian cooking—wansoy is commonly used to add a zesty, refreshing finish to salsas, curries, soups, salads, and noodle dishes. Both the leaves and tender stems are used for their fresh flavor, while the plant’s seeds, known as coriander, provide a warm, mildly spicy taste. Often compared in appearance to flat-leaf parsley but with a softer texture, wansoy is also widely known as cilantro, coriander, or Chinese parsley.

The "Grightmire's Pride" tomato is a large, pink, heart-shaped, heirloom paste tomato that is known for its meaty, low-acid, low-seed fruit with a sweet, flavorful taste. It is a prolific and early-maturing, indeterminate variety, originating from Yugoslavia, and is excellent for sandwiches, salads, and sauces.

Salsify (Sahl-seh-fee) is known as the oyster plant or oyster vegetable. These giant pencils are members of the dandelion family, a Mediterranean plant with a delicate taste, ever so slightly sweet, some say slightly reminiscent of oyster. Many liken it to an artichoke instead, however.
