Thai water spinach (Pak Boong) is a fast-growing, hollow-stemmed aquatic vine with arrowhead-shaped leaves and trumpet-like flowers, known for its tender stems and mild, slightly sweet, vegetal flavor, making it a staple in Southeast Asian stir-fries, soups, and curries, prized for its vibrant green color and quick cooking time. 

Stems: Long, hollow, smooth, succulent, and tender, ranging from green to whitish.

Leaves: Light to dark green, heart-shaped or arrowhead-shaped (sagittate) with long petioles (leaf stalks).

Flowers: Trumpet-shaped, usually white with a mauve center, but can also be pink or pale lilac. 

Taste: Mild, slightly nutty, with sweet and mineral notes, not bitter like regular spinach.

Texture: Crisp and pliable when young, becoming tender when cooked.

Culinary Uses: Popular in Thai dishes like Pad Pak Boong Fai Daeng (stir-fried with garlic and chili), curries, and soups, often cooked quickly to retain color. 

Habitat: Grows in water or moist soil, rooting at nodes, with long, trailing vines.

Climate: Thrives in tropical, warm, humid conditions and is intolerant of frost.

Hot Hungarian Wax ORG

The Hungarian Wax is a bright yellow, medium-hot pepper that averages 5" in length and turns red when mature. The compact plants grow up to 24" tall and are very productive in short-season climates. Early and widely adapted, this is a great all-purpose pepper for processing and pickling, suitable for the home garden. 2,000 Scoville Heat Units.

Since the mid 16th century, the Hungarians have performed culinary marvels with both hot and sweet peppers. Hungarian Hot Wax pepper seeds come from a cross between the mild banana pepper, native to Hungary, with hot chile peppers. This new variety of hot pepper came to the United States in 1932 and gained immediate popularity.

Big and juicy banana-shaped waxy peppers grow 5” long on 3’ tall plants. Ripens from pale yellow to deep golden orange and finally cherry red. Very productive even in cool weather. Great for short seasons. This pepper originated from Hungary in 1941 and is also known as Hot Banana Wax. For milder peppers with less heat, harvest early when pale green-yellow. As the pepper matures to red it gets hotter. These look like sweet Hungarian peppers and the only way to tell them apart is the heat! sandwiches.Capsicum annuum. (68 days)

Anna Russian Cuor di Beau, Oxheart Tomato Seeds

The ‘Anna Russian’ tomato is an early-maturing, indeterminate heirloom prized for its large, pinkish-red, heart-shaped (oxheart) fruits with distinctive green shoulders and a pointed blossom end. Fruits typically weigh 8–16 ounces and feature velvety, juicy, dense flesh with very few seeds, delivering an excellent sweet, rich, old-fashioned flavor that is naturally low in acidity. Although the plant’s wispy, finely cut foliage may appear delicate or even unhealthy, it is normal for this variety; the vigorous vines are highly productive, producing heavy yields in clusters of two to three fruits, especially impressive for an early-season tomato. Maturing in approximately 65–85 days from transplant, Anna Russian performs reliably and is well suited for fresh eating—particularly sandwiches—as well as canning thanks to its meaty texture. Originally brought from Russia to Oregon, this variety was introduced to the Seed Savers Exchange in 1989 by Craig LeHoullier.

Yellow Fatalii, Heirloom Pepper, Caribbean Pepper Seeds

Fatalii - An extremely hot heirloom chile with fruity citrus flavor. Both Fatalii and habaneros have extreme heat and belong to the Capsicum chinense species that is native to Central America, the Yucatan, and the Caribbean. This pepper is special, because it was transported to Central and South Africa in the 18th century, making its origin from Africa now. This pepper adds heat to delicious citrus salsas. 
The Fatalii peppers start pale green, and then mature to a bright yellow.

In early spring, start seeds indoors 8 weeks prior to warm nightly temperatures. Place the seeds in sterile media and cover 1/4” deep. Plant them directly into rich soil, 24” apart or into large 3 gallon containers. Peppers grow from pale green to bright yellow at maturity.
