Thai Basil. A member of the mint family, thai basil is sweet in taste but also charming to the eye - making it a garden favourite. 

It has a liquorice flavor for stirfry, soups and salads.

Fenugreek is an annual plant in the family Fabaceae, with leaves consisting of three small obovate to oblong leaflets. It is cultivated worldwide as a semiarid crop. Its seeds and leaves are common ingredients in dishes from the Indian subcontinent.

Fresh and dried fenugreek leaves can be used to finish dishes like sauces, curries, vegetable dishes, and soups. Fenugreek seeds can be used whole or ground and used in spice blends such as garam masala, panch phoran (Indian five-spice), or dry rubs for meat.

(60 days) Open-pollinated. Because of their cold hardiness, collards were a miracle crop that sustained many southern folks through the winters during the Great Depression. Vates is the acronym for Virginia Truck Experiment Station, a hotbed of collard research from 1907-1967. Introduced in the 1930s, this was probably the best-known of all the many developed there. Large upright 1½–2' plants give generous harvests of dark green thick crumpled leaves with a mild cabbage-like flavor. Will overwinter in high tunnels in our climate. 

The best environment to grow collard green or mustard greens is in full sun with plentiful, consistent moisture to thrive in your garden. Greens are frost tolerant, so growing them as a late season crop is ideal. Planting greens can also be done in early spring for a summer harvest, but more watering is likely necessary for them to grow successfully during the summer heat. Use insect netting to help protect from early insect infestations. Collards are best consumed in gumbo, braised, or sauteed.

Iceberg lettuce grows in small, dense heads. Commonly used in salads and sandwiches, they are prized more for their texture and crispiness than for the flavor of the leaves themselves. Iceberg was first cultivated in the Salinas Valley of California, then packed in ice and distributed across the US on trains, earning its namesake. Space plants 12" apart with 18" between rows.

These are the family favourite lettuce variety for salads and sandwiches. Make sure to give steady watering throughout the year to allow for these to properly shape into round, firm heads.  Your kids will thank you!

Yellow celery, such as ‘Golden Self Blanching’ or Chinese yellow-stem types, is valued for its tender, pale yellow to golden stalks and its milder, sweeter flavor compared to traditional green celery. The stalks are crisp yet delicate, often with less fiber and occasional hollow centers, especially in Chinese varieties. Many yellow celery types are considered self-blanching, meaning they naturally develop their light color without soil mounding, though some benefit from light blanching for the best color and tenderness. Popular varieties include ‘Golden Self Blanching,’ ‘Golden Boy,’ ‘Golden Pascal,’ and ‘Yellow Stem.’ Thanks to its gentle celery flavor and succulent texture, yellow celery is excellent for fresh eating in salads, adds refined crunch to stir-fries and soups, and works well as a subtle flavoring ingredient in a wide range of dishes.

Crystal Wax is a white Bermuda type, flat with almost no neck.

The flesh is waxy white, coarse and mild.

Great for stews and soups, but we stir fry with it and crystal white wax carmelizes to perfection.

Also known/used as a cocktail onion for those of you who drink Gibson martinis.

Does not make a good storage onion, but is used fresh for bunching or pearl onions for pickling.
