Traditional & Old Fashioned Thyme, Herb Seeds

Thyme produces attractive bushy plants with tiny grey-green leaves. Not only used to flavor most meat, fish, and vegetable dishes, this versatile herb can also be used as a plant for rock gardens and edging.Thyme is extremely aromatic and has a pleasant, pungent, clover flavor. 

PLANTING THYME:

Most gardeners will not grow thyme from seeds as the germination can be slow and uneven.

It's best to purchase the plant or use some cuttings from another thyme plant.

Plant the cuttings or seeds indoors 6-10 weeks before the last spring frost to get a head start.

2-3 weeks before the last spring frost, plant the seeds/cuttings in well drained soil about 9 inches apart.

Thyme plants should grow about 6-12 inches in height.

You can plant thyme alongside tomatoes and cabbage.

CARING FOR THYME PLANTS:

Water regularly and trim the plants regularly.

Prune the thyme plants in the spring and summer to contain growth.

To protect the plants during the winter, lightly mulch around the soil.

HARVESTING THYME:

You can harvest the sprigs and leaves in the summertime.

To dry the sprigs, hang them upside down in a dry, cool place such as a cellar.

Latin Culantro Cimarron, Latin Herb, Mexican Coriander, Herb Seeds, South American

Culantro cimarron, also known as Mexican coriander or long coriander, is a tropical herb (Eryngium foetidum) with a strong, pungent flavor and aroma similar to, but more intense than, cilantro, and is used in various Caribbean and Latin American cuisines. 

Appearance: Culantro cimarron has long, tough, green leaves with serrated or toothed edges, earning it the nickname "saw leaf herb". 

Taste and Aroma: It shares a similar flavor profile to cilantro but with a more potent, almost citrusy, and earthy taste. 

Culinary Uses: It's commonly used in soups, stews, rice and bean dishes, and as a flavoring in marinades and salsas, particularly in Puerto Rican and other Caribbean cuisines. 

Other Names: It has various names, including fitweed, ngò gai, recao, and shado beni. 

Medicinal Uses: Culantro cimarron has been used traditionally in folk medicine for various ailments, including chills, vomiting, burns, fevers, and more. 

Cultivation: It is a tropical perennial and annual herb, native to Mexico and South America, and cultivated worldwide.

Scientific Name: Tagetes minuta

Appearance: Unlike the short, bushy garden marigolds you might know, Huacatay is a leggy, upright herb that can grow between 4 to 6 feet (1.2–2 meters) tall.

Leaves: The leaves are long, slender, and serrated (jagged) with a deep, glossy green color. They contain numerous oil glands that release a potent scent when brushed or crushed.

Flowers: It produces very small, inconspicuous pale yellow or green flowers that grow in clusters at the top of the stems.

The flavor is incredibly complex and difficult to replicate with a single substitute. It is often described as a bold fusion of:

Spearmint & Basil: For sweetness and herbal freshness.

Tarragon: Providing a subtle anise or licorice-like finish.

Lime/Citrus: Giving it a bright, zingy punch.

Earthy/Pungent: It has a resinous depth that is much stronger than common garden mint.

In Peru, this herb is rarely used as a garnish; it is almost always ground into a thick, vibrant green paste.

Ocopa: The most famous use of Black Mint. It’s a creamy, spicy sauce made with Huacatay, peanuts, cheese, and crackers, served over boiled potatoes.

Pollo a la Brasa: It is a key ingredient in the marinade for Peruvian rotisserie chicken.

Pachamanca: A traditional Andean feast cooked underground, where Huacatay is used to season the meats and tubers.

Medicinal Tea: It is commonly brewed as a tea to aid digestion, relieve stomach cramps, or treat respiratory issues.
