As described around 50 AD, lettuce leaves were often cooked and served by the Romans with an oil-and-vinegar dressing; however, smaller leaves were sometimes eaten raw. During the 81–96 AD reign of Domitian, the tradition of serving a lettuce salad before a meal began. Post-Roman Europe continued the tradition of poaching lettuce, mainly with large romaine types, as well as the method of pouring a hot oil and vinegar mixture over the leaves.[10]

Today, the majority of lettuce is grown for its leaves, although one type is grown for its stem and one for its seeds, which are made into an oil.[22] Most lettuce is used in salads, either alone or with other greens, vegetables, meats and cheeses. Romaine lettuce is often used for Caesar salads. Lettuce leaves can also be found in soups, sandwiches and wraps, while the stems are eaten both raw and cooked.[11]

The consumption of lettuce in China developed differently from in Western countries, due to health risks and cultural aversion to eating raw leaves; Chinese "salads" are composed of cooked vegetables and are served hot or cold. Lettuce is also used in a larger variety of dishes than in Western countries, contributing to a range of dishes including bean curd and meat dishes, soups and stir-frys plain or with other vegetables. Stem lettuce, widely consumed in China, is eaten either raw or cooked, the latter primarily in soups and stir-frys.[47] Lettuce is also used as a primary ingredient in the preparation of lettuce soup.

Buttercrunch butterhead lettuce seeds are a Bibb type lettuce that forms a tight little rosette of soft, dark-green, upward-facing leaves surrounding a tender, pale centre. The small hearts don't become bitter in hot weather. Later plantings stand well into fall and make good growth in spring cold frames.

Butter lettuce is a leaf lettuce. Leaf varieties have loose heads and are known as the "cut and come again" lettuces as they can be harvested multiple times from a single plant. They are great short season varieties as well as more heat-tolerant than head lettuce.
Applications
Butter lettuce large, tender, mild flavored leaves lend themselves to a number of culinary applications. Add to salads or sandwiches, or use whole leaves as cups to hold fillings such as minced chicken or Korean BBQ. It's vibrant color also makes it perfect for garnishing serving dishes and buffets.

Miscuglio di Lattuga/Lettuce Mix: Mix of lettuce with thick and compact red and reddish green leaves. Heads are large. Plant is an excellent yielder. This is a very popular second-early variety. Plant is well suited for summer growing's.

Spring mix is made up of 16 fresh greens and lettuces of varying tastes and textures, including red romaine, baby spinach, radicchio, green romaine, red oak leaf, mizuna, red leaf, lollo rosso, arugula, red mustard, green mustard, red chard, frisee, and tatsoi. About half of the greens and lettuces are sweet and mild while others provide a complementary slightly bitter edge.

Geography/History

Spring Mix, also known as “Mesclun,” is a name used for a salad mixture of leaves of various species. The name Mesclun comes from the Spanish word "mezclar," which translates to "to mix." Traditional mesclun usually consisted of chervil, arugula, lettuce, and endive.

Royal Oak Leaf Lettuce, Looseleaf, Heat Lettuce

This heat-resistant, long-standing leaf lettuce produces large rosettes (indistinct heads) of oakleaf-shaped, dark-green leaves with thick midribs. Its tender leaves resist turning bitter even in hot temperatures.

Looseleaf type lettuces do not form a compact head, and are cultivated for the tender, delicate leaves which grow from a central stalk. They usually reach maturity between 45-55 days after germination, though larger leaves can be collected throughout the growth cycle. Like other lettuces, looseleaf types can be sensitive to excessive heat and light, which may result in bolting, or wilting leaves. This variety is commonly used in salads and sandwiches. Space plants 6" apart, with 12" between rows.

Red Boston lettuce is a medium to large varietal and round in shape with loose, wavy, cupped leaves and an open center, similar in appearance to a rose. The broad, soft, outer leaves are thick and frilled at the edges with swirls of red, purple, and burgundy, and these leaves encompass more tightly bound, yellow-green leaves in the center of the head. In addition to fresh preparations, Red Boston lettuce can be cooked and transformed into an earthy and sultry ingredient when slowly braised or added to simmering soup, achieving a level of caramelization when paired with the right ingredients such as butter, rich meats, and chicken stock. It can also be used in stir-fries or mixed into cooked peas. Red Boston lettuce pairs well with bright herbs including dill, basil, and mint, lemon juice, mustard, vinaigrettes, citrus-based dressings, blue cheese, feta cheese, cottage cheese, ricotta cheese, bacon, anchovies, shallots, leeks, nuts such as pistachios, walnuts, hazelnuts, and Marcona almonds, apples, pears, seedless grapes, persimmons, and sliced grapefruit. Little Gem Lettuce Seeds, Heat Lettuce, Butterhead/Romaine Cross

Lettuce seeds can be planted directly into the garden soil.

Sow the seeds directly into the garden soil beginning in early spring starting 2 weeks prior to the last frost-free date. 

Plant the tiny seeds 1/4" deep and later thin to 10" apart. Seeds can be planted every 3 weeks for a staggered harvest or once again in late summer for a fall harvest. Fall planting can occur 10 weeks before your average first frost date.

Build up a raised row of soil about 8" wide. Scatter the seeds in a line on top and then cover with 1/4” to 1/2" of soil. Keep the soil evenly moist. Lettuce seeds will germinate in 5-10 days depending on the soil temperature. Germination is slower in the cold weather of spring. 

Lettuce has shallow roots so gently mulch around it to deter weeds and retain soil moisture.

The ways to harvest lettuce include harvesting it as a baby green by picking individual young leaves, harvesting the outer leaves as needed and letting the plants grow, or by harvesting the entire head by slicing it off about an inch above the soil.
