Eggplant

Eggplant can be steamed, stir-fried, pan fried, deep fried, barbecued, roasted, stewed, curried, or pickled. Many eggplant dishes are sauces made by mashing the cooked fruit. It can be stuffed. It is frequently, but not always, cooked with oil or fat.

Eggplant is used in the cuisines of many countries. Due to its texture and bulk, it is sometimes used as a meat substitute in vegan and vegetarian cuisines.[38] Eggplant flesh is smooth. Its numerous seeds are small, soft and edible, along with the rest of the fruit, and do not have to be removed. Its thin skin is also edible, and so it does not have to be peeled. However, the green part at the top, the calyx, does have to be removed when preparing an eggplant for cooking.

Asian Pingtung, Ping Tung Long Eggplant, Taiwan

These beautiful eggplants get their name from a county in Taiwan called Ping Tung, where they were first grown. Each fruit can grow to 18" long and 2" in diameter, with a bright purple skin that can be left on when cooking. It's particularly well known for its high, constant yields, and for being dependable even in periods of extreme heat. It has an excellent mild flavor without a trace of bitterness. Listada de Gandia Eggplant, Italy Eggplant Seeds

Listada de Gandia is an heirloom eggplant variety known for its beautiful, bi-colored skin with purple and white stripes, tender flesh, and mild, sweet flavor. It is an oval-shaped fruit that typically grows to about 5-6 inches long, is productive even in heat, and has a thin skin that doesn't need to be peeled before cooking. It is considered particularly good for grilling, roasting, or baking. 

Appearance: Oval-shaped fruit with a thin skin that has a striking pattern of purple and creamy white stripes.

Flesh: Creamy white, tender, and mild.

Flavor: Sweet and mild with no bitterness, especially when harvested at the right time.

Size: Approximately 5–6 inches long.
