Rainbow Swiss Chard is a striking leafy green with vibrant stems in shades of red, pink, yellow, orange, and white paired with broad, dark green leaves. It has a mild, slightly earthy flavor similar to spinach, with tender leaves and crisp, colorful stalks. Highly nutritious, it’s rich in vitamins A, C, and K, plus iron and magnesium—pretty and powerful.

Rainbow Swiss chard is super versatile. The leaves cook quickly and are great sautéed with garlic and olive oil, added to soups, stews, curries, or stirred into pasta and rice dishes. The thicker stems can be chopped and cooked a bit longer—perfect for stir-fries, gratins, pickling, or roasting. It’s also excellent in omelets, quiche, lasagna, and stuffed dishes, or lightly wilted as a spinach substitute.

Rutabaga, Scandinavia

Rutabaga is a root vegetable that belongs to the Brassica genus of plants, whose members are informally known as cruciferous vegetables. It's round with a brownish-white color and looks similar to a turnip. In fact, it's commonly referred to as a cross between a turnip and a cabbage.

Rutabagas likely originated as a cross between turnips (Brassica rapa, variety rapa) and wild cabbage (Brassica oleracea) and are thought to have been first bred in Russia or Scandinavia in the late Middle Ages.

New Zealand Cook's Cabbage Spinach Seeds, Cooks Cabbage, Tetragon, Australia, Argentina, and Japan

Tetragon cabbage, also known as New Zealand spinach, is a leafy plant with triangular leaves, yellow flowers, and small, hard capsules that contain seeds. It's a trailing plant that can form a thick carpet on the ground or climb through other plants.Tetragon is usually grown for its leaves, which can be added in salads or cooked. Thanks to its ability to withstand difficult climates, this plant grows readily in the wild in China, Reunion Island, and New Zealand. It is also fairly easy to grow in Quebec, but it will behave as an annual since it cannot tolerate frost.

Held up by a round stem, tetragon has a really unique look with its thick leaves and quadrangular fruits. Good source of vitamin B1, B2 and C; the spinach is both delicious and nutritious!
