Chocolate Scotch Bonnet, Chocolate Pepper, Caribbean Pepper

Chocolate Scotch Bonnet has a slight bonnet shape like it's yellow relative. But it is much hotter and the peppers get much larger in size. It has a fruity and slightly smoky flavor. Peppers ripen from green to dark brown and can get almost 2 inches in diameter.

Anyone that's ever had a taste of the unique, super-hot Scotch Bonnet chilli pepper will know that it packs a powerful punch – it hits between 100,000 to 350,000 scovilles! To put it in perspective, Jalapeno peppers have a Scoville unit between 1,000 to 10,000. So yep, they're hot.

Shishito Oriental Japanese Sweet Pepper, Popular Japanese Frying Vegetable Pepper Seeds

Grow the pepper that’s long been prized by restaurants and is a favorite among chefs. Shishito is a Japanese sweet pepper that produces handfuls of finger-long fruits. Usually used when green (though also fine to eat when red), the peppers are thin-walled, making them ideal for tempura and stir fries. On this side of the Pacific, it’s wildly popular as an appetizer—tossed with oil, then char-grilled or pan-seared to a blackened, blistered state and salted. Plants are compact and perfect for containers. Use one plant per 18-inch pot.

Martinez Red Chimayo Mexican Pepper, Pueblo Indians, Spice & Sweet

Chimayo

Heat Level: Medium  Scoville 4,000 - 5,000

Chimayo-(Capsicum annuum)-Chimayo chiles are a chile that is deeply rooted in Native American and New Mexico Historical culture. Named after the small town just 28 miles north of Santa Fe, New Mexico. The name Chimayo comes from the Tewa Indian word which means flaking red stone. The town of Chimayo is home to the El Sanctuario de Chimayo. A place of worship built in 1816 and one of the most visited Religious landmarks in America. People make pilgrimages there every year from around the world. It is rumored that this chile was brought to this valley in 1598 by Don Juan de Onate when he settled the area on behalf of Spain. The Chimayo chile is grown in the surrounding valley and is harvested when red. It is not produced on a large scale so the powder still gets a good price. The flavor is very complex and you can make sauces with just the powder and salt and nothing else! So just imagine how much you can do with it in the kitchen with other ingredients! The Chimayo chiles are over 1 inch wide and 3 to 6 inches long. They can be eaten freshly roasted but are more suited for making seasoning powders after drying. The Chimayo chile plants are very productive and grow to almost 2 feet tall.
