Asian mustard (Brassica rapa rosularis) having a rosette of edible dark green spoon-shaped glossy leaves also : the leaves.

Sow tatsoi in spring and again in late summer for harvest in fall. Sow in double rows, with rows spaced 10 inches (25 cm) apart. Plant seeds 2 inches (5 cm) apart and barely cover them with soil. Gradually thin to 8 inches (20 cm) apart.

Tatsoi is a very versatile green, equally suited to being served raw or lightly cooked. To make it easy, just use tatsoi anywhere you'd use spinach. Lightly steam or sauté it, wilt the leaves with a warm dressing, or add them to a soup at the end of cooking.

Radicchio is a perennial cultivated form of leaf chicory sometimes known as Italian chicory because of its common use in Italian cuisine. It is grown as a leaf vegetable and usually has colorful white-veined red leaves that form a head. Radicchio has a bitter and spicy taste which mellows if it is grilled or roasted.

Tall and pointed, it looks like a large red endive, with a similarly mild flavor. The sturdy, narrow leaves are made for scooping up dips.

Hot Portugal is a vigorous heirloom pepper variety known for producing long, slender pods that mature from bright green to deep red. Typically growing 6–8 inches (15–20 cm) long, these peppers have a smooth skin and slightly curved shape. The flavor is rich and mildly sweet with a noticeable kick of heat, making them excellent for frying, grilling, sauces, or drying. Plants are productive and perform well in warm climates or greenhouse gardens.Portugal, is a moderate to hot and very flavourful (sweet heat) chilli pepper. It is fast growing and very early-fruiting and gives abundant harvests of 15cm wrinkled dark green fruits ripening to a brilliant glossy red on vigorous, upright plants. red or in some cases orange.

It's got a standard red bell pepper base flavor with a mild sweetness and distant cayenne-like smokiness. For a lack of a better description, the flavor is fairly straightforward with a light fruitiness echoing late after each swallow. There's actually a decent bit of heat on this one.

This variety has large, light green, round leaves and red nervures in the center. The plant produces a high yield of tender leaves even in warmer weather. Amaranth will tolerate hot, dry and moist condition but will not thrive in cold temperatures.

Amaranth has many common names: Chinese spinach, edible amaranth, bayan (Malaysia and Indonesia), Calaloo (Caribbean), klaroen (Surinam),Xian cai (Mandarin) Yin choi/in tsoi (Cantonese) Hi-yu-na, Jave hohrensoh (Japanese). Its’ origins are in the tropics of the Carribbean, Asian and African, but now has spread all over the world. They are exceptionally nutritious plants, and from ancient times, seed and leaves of cultivated and wild forms have been used by man for food, medicine and animal fodder. Many exhibit striking colors in leaves and flowers and have been grown as ornamental plants in the west. Known as Red Calaloo in the Caribbean, it has medium green, oval to heart-shaped leaves that are overlaid with burgundy red. Comparable to spinach in taste, the leaves are a good source of dietary fiber and contain high amounts of protein, vitamins, and minerals. It is often used in soups. For practical purposes the Amaranthus species can be divided into the following groups according to their main use today: leafy Amaranths, grain Amaranths, decorative Amaranths and weeds. Because the leaves of all Amaranths are edible, all can be considered a vegetable. The leafy Amaranths are the best for cultivating. They are erect, branching, short lived annuals with an average height of about 35cm-150cm when flowering. Leaves are soft textured and go limp quickly after being picked. Both the leaves and stems are edible and delicious. The flavor can be described as ‘like artichokes’ and ’spinach with a bit of a twang’.
